Iced tea with lavender and honey

The American dream includes a British habit, slightly tampered: tea in its coolest version. Today (June 10th) is dedicated to the refreshing pleasure of the iced tea -the result was an unusual abundance of recipes for delightful iced tea on the web. We chose one that combines our special love for the herbs, tea and thyme honey.

INGREDIENTS
8 cups boiling water
6 Earl Grey tea bags
1 teaspoon dried lavender flowers
FoodsCross Premium Greek Honey with 60 or 80% thyme pollen grains
Lavender or mint sprigs, for garnish

In a very large heatproof measuring cup, infuse in 7 cups boiling water the tea bags and dried lavender flowers; let steep for 10 minutes. Strain the tea and let cool. Separately combine the honey (as much as you want) with the remaining 1 cup warm water (no more than 40oC) and stir well. Add the water with the honey to the tea and let cool. Serve the tea in tall ice-filled glasses, garnished with lavender or mint sprigs.
