Honeycake from Sifnos island

This recipe is made in the island of Sifnos: the birth place of the writer of the most famous cooking books in Greece. It resembles a cheesecake and is quite easy to make. In the winter when you have more time to spend at home, if you like cooking you will enjoy making this pie just as much as you will enjoy eating it.

Ingredients for 8 persons:

1.000 gr. unsalted soft white cheese
300 ml. prime thyme honey by FoodsCross
100 gr. sugar
7 eggs
3 table spoons flour
1 table spoon butter

Preparation:
Preheat the oven at 180°C. Crumble the cheese with a fork and add the honey with the sugar. Whisk well. At the end, add the eggs slightly whisked.

Brush bottom and sides of a cake pan (30x30cm) with butter and flour and pour the mixture. Bake for 45-50 minutes at 180°C, until its surface takes a golden hue.

Let cool and serve with honey and cinnamon.
