Ingredients for 2 servings:
- 2 slices of bread
- 2 medium-sized eggs
- 1/2 ripe avocado
- 60g cream cheese
- ½ teaspoon of dried garlic
- 2 tsp lemon juice
- 100g smoked salmon
- 25g Rocket microgreens FoodsCross
- Salt and fresh pepper
Directions:
Toast the bread slices in the toaster oven or oven until lightly golden.
For the poached eggs:
1. In simmering water, add a spoonful of salt and a spoonful of vinegar and stir with a wooden spoon to create a swirling.
2. Break the egg in the exact centre of the swirling and use the spoon to pour the boiling water over it regularly so that it can thicken.
3. In about a minute, remove it from the pot with a slotted spoon.
For the creamy avocado sauce:
1. Place half of the avocado in a bowl and add the cream cheese and dried garlic.
2. Use a fork to mash the ingredients.
3. Add the lemon juice, salt and pepper and continue until the mixture is smooth.
To serve:
Spread the avocado sauce on the bread and add your ingredients one by one: the smoked salmon, poached egg, and Rocket Microgreens.
