Open Sandwich with creamy avocado sauce, smoked salmon & Rocket microgreens

Ingredients for 2 servings:

  • 2 slices of bread
  • 2 medium sized eggs
  • 1/2 ripe avocado
  • 60g cream cheese
  • ½ teaspoon of dried garlic
  • 2 tsp lemon juice
  • 100g smoked salmon
  • 25g Rocket microgreens FoodsCross
  • Salt and fresh pepper

Directions:

Toast the bread slices in the toaster oven or oven until lightly golden.

For the poached eggs:
1. In simmering water, add a spoonful of salt and a spoonful of vinegar and stir with a wooden spoon to create a smoky smell.
2. Break the egg in the exact centre of the dune and use the spoon to pour the boiling water over it regularly so that it can thicken. 3. In about a minute it is ready and remove it from the pot with a slotted spoon.

For the creamy avocado sauce:
1. Place half of the avocado in a bowl and add the cream cheese and dried garlic.
2. Use a fork to mash the ingredients.
3. Add the lemon juice and salt and pepper and continue until the mixture is smooth.

To serve:
Spread the avocado sauce on the bread and add your ingredients one by one: the smoked salmon, poached egg and Rocket microgreens.
