Pesto Microgreens

Ingredients:

  • 100 g BIO Microgreens (mustard, broccoli, radish, any or all of them together)
  • 100 g olive oil
  • 100 g pine nuts
  • 80 g grated parmesan
  • 1 clove of garlic
  • fresh pepper

Instructions:

  1. Blend the microgreens, olive oil, pine nuts and garlic until pureed in a food processor.
  2. Add the parmesan and pepper, blend some more and you’re done!

Nutritional Value

Microgreens are an excellent addition to your dishes not only because of their unique taste but also because of their anti-cancer and anti-inflammatory properties. Combined with the allicin that gives garlic antibacterial, antifungal and antioxidant properties, this dressing is a great choice for sandwiches, and salads or as a more nutritious option for your pasta dishes!
