Scrambled eggs with kale microgreens

Ingredients

  • 3-4 eggs
  • 30g of cream cheese
  • 25g kale microgreens
  • Salt and pepper
  • A little olive oil for the pan

Instructions:

  1. Break the eggs into a bowl, add the cream cheese and mix vigorously until well incorporated.
  2. In a pan over medium heat, heat the olive oil and pour the egg mixture.
  3. Gently mix the eggs with a spatula until they thicken slightly.
  4. Season with salt and pepper, garnish with the kale microgreens and serve immediately.
